After all, replacing a loaf of milk and fatty meat with something dietary at first seems impossible. But “Dukan” cutlets, made from foods allowed by the diet, are no less tasty, plus they are also good for your figure. It is allowed to eat vegetable, liver and chicken cutlets according to Dukan.

Recipe for chicken cutlets with bran and herbs

An excellent recipe for cutlets that are suitable for the Dukan attack stage.

What will you need?

  • Chicken thighs - 4 pcs. (or legs - 2 pcs.);
  • Oat bran plus low-fat milk - 1 tbsp. l and 2 tbsp. l.;
  • Small onion head;
  • Egg;
  • Dill (parsley) - fresh, dried or frozen;
  • Ready-made spices (it is better if they are without extraneous additives - flavor enhancers, preservatives and salt);
  • Salt - to taste or at the rate of 1 tsp. per kg of finished minced meat.

Sequencing

  1. The first step is to mix the bran with milk. For minced meat, ready-made chicken fillet - breast, which is usually not juicy, will also work. Therefore, do not be lazy to trim the meat from the thighs and legs.
  2. Place onion, chicken, milk-soaked oat bran, egg, salt and spices in a blender and grind. It is better to chop the dill by hand and add it at the end. Place the cutlets on a baking sheet with a spoon (about 10 pieces come out) - heat-resistant glass dishes are also suitable for these purposes.
  3. Place in a preheated oven (200°) for 35 minutes. In total, the time spent on preparation and the time spent by the cutlets in the oven is 45-50 minutes. The result is a very tasty, and, most importantly, dietary (can be eaten at any stage of the diet, including “Attack”) dish.

Recipe for cutlets “A la lazy cabbage rolls” according to Dukan

This dish can be eaten, without violating the principles of the diet, on vegetable days, starting from the second stage of “Cruise”.

What will you need?

  • Beef - 300 g.
  • Cabbage - 100 g.
  • Bran - according to Art. l. wheat and oatmeal.
  • A couple of tablespoons of low-fat milk.
  • Egg.
  • Salt, spices - to taste.

Sequencing

  1. Pre-soak the bran in milk (10 minutes is enough for them to swell). Grind the meat with onion, egg, salt and spices in a blender. Add bran. Finely chop the cabbage and mix with the prepared minced meat.
  2. Form large-sized cutlets (makes 7 pieces) and place them in a casserole dish. Pour water from the top to half the volume of the container. Simmer on the stove or in the oven for about an hour. These cutlets go well with tomato sauce.


Liver soufflé recipe


What will you need?

  • Liver (chicken or beef) - 300 g. Chicken liver soufflé will be more tender;
  • Bran - 2 tbsp. l. (you can combine them - oatmeal plus wheat);
  • Egg;
  • Bulb;
  • Salt;
  • White low-fat (up to 2%) yogurt - 2-3 tsp.

Sequencing

  1. Grind the liver in a blender, adding at once the onion, bran and egg. Place the resulting substance in a deep container and place in an oven preheated to 200° for 25 minutes.
  2. After the specified period of time, remove the soufflé from the oven and grease its surface with yogurt. Then you can immediately put it on plates, or you can send the soufflé back into the still hot (but now turned off) oven to sweat for 5 minutes and soak in yogurt.


Fish cutlet recipe


What will you need?

  • Hake - 1 fish;
  • Pink salmon (or any other representative of salmon) - 200 g.
  • Egg;
  • Substance made from milk and oat bran - 3 and 1 tbsp. l.;
  • Half an onion;
  • Salt, spices, herbs;

Sequencing

  1. The ordinary grayness of traditional fish cutlets will be diluted with bright colors by the addition of red fish. To get rid of bones, you can boil the fish. After this, it is easy to notice even small bones.
  2. Then the fish fillet, egg, onion and milk bran are crushed in a blender. Salt, spices and herbs are also sent there.
  3. Having formed fish balls and placing them in a deep baking tray, pour 2-3 tbsp. l. water and place in a preheated oven for half an hour. If you are not lazy and periodically “look” at the meatballs and pour “cutlet” juice over them, they will turn out juicier, and, therefore, even tastier.

I have one chicken breast (already half eaten) and 300 grams of minced meat. I decided to make cutlets from it, but not simple ones. The recipe came to mind spontaneously, I just had to remember that I recently bought wheat bran that was lying around. I was very pleased with the result of the preparation. How to make juicy chicken cutlets with bran step by step

  1. Separate the bones and cartilage from the meat, remove the skin. We pass the resulting fillet through a meat grinder or grind it in a blender.
  2. Break an egg into a plate with high sides, add salt, spices, bran - mix it all well with a fork.
  3. Combine the egg mixture with the minced meat and stir until smooth. With wet hands, form several oblong cutlets of the same size and place on a greased plate.
  4. Heat a drop of oil in a non-stick frying pan, then check how hot it is by splashing water. Did he hiss? So, lay out the cutlets, cover with a lid and simmer over medium heat for 7-10 minutes.

  • Salt - ½ tsp.

  1. First of all, turn on the oven, setting the temperature to 180°C.
  2. Then we cut the breast, separating it from the cartilage and keel bones, and remove the skin. Grind in any convenient way. But the smaller the better, otherwise the large pieces may cause the meatballs to fall apart.
  3. Chop the onion, combine with minced meat, add salt and spices, beat in the egg, mix everything. We form small cutlets - slightly larger than meatballs.
  4. Pour the bran into a saucer, roll the cutlets in it and immediately place each one on a baking sheet lined with baking paper.

  • Breast or thigh fillet - 400 g;
  • Onion - 1 pc.;
  • Egg - 1 pc.;
  • Cream - 2 tbsp. l.;
  • Bran - 2 tbsp. l.;
  • Fresh chopped greens - 1 tbsp. l.;
  • Salt, spices - to taste.
  1. We prepare the meat in such a way that there is no skin, fat or veins left on it (depending on which part we take the fillet from). Grind it in a blender and transfer it to a deep plate, where we will knead the minced meat.
  2. Pour in the cream, beat in the chicken yolk and add the bran. Mix everything, add spices to taste.
  3. Beat the remaining egg white with a mixer at high speed with salt until stiff peaks form. Gently stir it into the minced meat with a spatula. We do everything carefully so that the air bubbles of the foam do not burst, because it is this that will give a special lightness to the consistency.
  4. We form small cutlets from the prepared minced meat and bake them on a baking sheet at 190°C for 30 minutes.

You can also make them into a meat soufflé by preparing them in muffin tins. Cutlets according to this recipe will be delicious both cold and hot.
