  1. We start cooking by preparing squid. Usually, for this salad, I take a couple of frozen squid carcasses, defrost them, rinse them and put them in boiling water for no more than 5 minutes. When cooked for a long time, the squid becomes “rubbery” and tasteless.
  2. To my regret, in the nearest market I found only a frozen piece of giant squid. I’ve never cooked them, but I took them to try. So, we are preparing tartlets with squid, but a giant one. Place the squid pieces into boiling water and cook under a closed lid for 7 minutes.
  3. Then she took it out and washed it with running water. When the squid had cooled, I cut it into strips. As it turns out, the giant squid was cute and edible! So you can safely use it for salads.

  5. A delicious filling for tartlets is made by adding fresh cucumber. We cut it in the same way as the previous products - into strips.

  8. Let's start with squid. Place the squid in already boiling water and cook for about 2-3 minutes. Then wash with cold water. We remove the film. Cut into small pieces.
  9. Pour the eggs with cold salted water, put on the fire, bring to a boil and cook for about 7-8 minutes. Then rinse with cold water. Peel and finely chop.
  10. Grate the cheese on a medium grater.
  11. Peel the garlic, wash it and pass it through a garlic press.
  12. Wash the cucumber, cut off the stems and cut into thin strips.
  13. Mix all prepared ingredients and season with mayonnaise.
  14. Mix thoroughly and fill our tartlets with the prepared salad.

Warm tartlets with squid

Ingredients:

  • tabasco sauce
  • freshly ground white pepper
  • squid fillet – 500 g
  • garlic – 1 clove
  • small head of broccoli – 1
  • mini asparagus – 10 stalks
  • dry white wine – 1/2 cup
  • soy sauce – 2 tbsp.
  • cream with fat content 33-38% – 1 cup
  • ready-made puff tartlets – 10
  • shallots – 3 onions

Cooking method:

  1. Clean the squid fillet from the films and very carefully cut it crosswise, without cutting through the fillet. Cut the fillets into rectangles measuring approximately 2 x 3 cm.
  2. Separate the broccoli into small florets, cut off most of the stem (it won’t be needed here) and steam for 3-4 minutes. or blanch in slightly boiling salted water for 1-2 minutes.
  3. Drain in a colander. Cut the onion into thin slices, chop the garlic. Heat the oil in a frying pan and fry the onion and garlic over medium heat until golden brown, 10 minutes. Add cream and white wine and reduce by half over high heat. Add squid and cook for 2 minutes.
  4. Add broccoli and remove from heat. Add soy sauce and Tabasco to taste, stir. Keep warm. Break off the tough bottom part of the asparagus stalks (about 1/4 of the length). Place the puff tartlets on a baking sheet and heat in an oven preheated to 160°C for 10 minutes.
  5. Divide the prepared filling among the tartlets and insert 1 asparagus stalk into each. Garnish with caviar and serve immediately.

  • parsnip root 0.5-1 pcs.;
  • boiled egg 1-2 pcs.;
  • hard cheese 70 g;
  • mayonnaise to taste;
  • a pinch of salt;
  • dill and green onions to taste;
  • arugula for decoration.

Cooking method:

  1. To prepare the salad, use freshly frozen squid carcass. First defrost the squid, remove all the intestines and chitinous core inside. Rinse the carcass with cold water. Then boil a few glasses of water in a ladle and boil the squid for 1 minute.
  2. Drain the water and rinse the carcass under cold water, remove all remaining pink skin. Boil clean water in a ladle again and lower the squid carcass for another 1-2 minutes, no longer. That's it, the squid is ready, add half a teaspoon of salt and leave aside for 5 minutes.
  3. Cut off the squid wings to decorate the finished dish, and chop the remaining carcass into strips.
  4. One small carrot and parsnip root must first be peeled and boiled until tender in a small amount of water. For the salad, chop the carrots and parsnips into small cubes.
  5. Place the prepared ingredients in a bowl and add chopped boiled eggs.
  6. Grate the aromatic cheese on a coarse or fine grater, pour in mayonnaise to taste.
  7. Prepare the mixed salad with dill or green onions. Salt and ground pepper can be added to this salad as desired.
  8. This salad is served in portioned tartlets: shortbread or waffle. From experience, I would like to give preference to shortbread tartlets; they do not soften quickly, unlike waffle tartlets. Carefully fill tartlets with salad.
  9. I recommend leaving this salad to soak for several hours for a richer and piquant taste.
  10. Use beautiful dishes to present salads. It is advisable to use a flat and wide plate for this. Place the tartlets on a plate in a circle, add a bunch of arugula in a mound in the center. Garnish each tartlet with chopped green onion stalks and sprinkle with egg yolk.

Ingredients:

  • tartlets (not waffle or sweet) - 24 pcs. approximately 5-7 cm in diameter
  • squid tentacles - 500 g
  • canned corn -1 can
  • eggs - 3 pcs.
  • fresh cucumbers - 2 medium
  • potatoes - 2 medium
  • onion - 1 bulb
  • mayonnaise-4-5 tbsp.
  • white wine vinegar
  • sugar
  • ground pepper

Cooking method:

  1. Thaw the squid tentacles and boil the water. Throw the tentacles into boiling water, let them boil again and turn off. Immediately remove the squids, let them cool and chop finely.

  3. Finely chop the onion, add salt, a pinch of sugar and 1 tsp. vinegar, mash the onion well. Add the onion and marinade to the squid, stir and refrigerate.
  4. Boil potatoes in their skins, hard-boil eggs, cool, peel and chop finely. Wash the cucumbers and cut into small cubes.
