Let's cook today Pinscher cake from Alexander Seleznev. Alexander Seleznev is a talented pastry chef and media personality. He is the host of the programs “Sweet Recipes”, “Culinary Holidays”, he is the author of the book “The Confectioner’s Bible”, and also the head of the confectionery house.

This recipe differs from the classic Pinscher dessert recipe. But let’s boldly trust the famous chef, who has won confectionery competitions more than once, this cake will surely please us.

For the dough we will need: 250 grams of flour, 200 grams of sour cream, a couple of eggs, 250 grams of sugar, 200 condensed milk, 1 teaspoon of soda, half a lemon, three tablespoons of cocoa, 1 teaspoon of baking powder.

The filling consists of: a couple of bananas, five tablespoons of powdered sugar, 50 grams of butter, 1 kg of sour cream 20% sour cream, 1 tablespoon of rum. The cake from Alexander Seleznev also requires decoration, it consists of: a couple of tablespoons of cocoa, rose petals.

Place eggs with sugar, milk, condensed milk in a bowl. Beat the ingredients with a mixer. Then add sour cream and beat again. In another bowl, mix cocoa, flour and baking powder, sift the contents through a sieve. At the end, add soda, which has been quenched with lemon juice. We put the dough into a baking dish, and into the oven, heated at 200 degrees, bake the sponge cake for about half an hour.

Peel the bananas and cut them into thick slices, then fry them in butter for a few minutes. Then add a tablespoon of powder to the bananas, give it time to melt, and then pour in the rum and set the contents on fire to evaporate the alcohol.

Assembling the cake

Cut the baked sponge cake into three layers. We leave one of the cakes as is for the base of the dessert, and cut the remaining two into cubes. Spread the fried bananas over the whole crust. Mix sour cream with powdered sugar until a homogeneous mass is obtained, and then dip each piece of biscuit into this cream and place them on top of the bananas.

Use the remaining sour cream to pour over the top of the cake. Distribute the cream evenly over the entire surface. Decorate with rose petals. At the end, sprinkle the pinscher with cocoa. Place in the refrigerator for several hours. Here is a pinscher from Alexander Seleznev.

For several years now we have practically not eaten store-bought cakes. Not because it’s tasteless, but because a few years ago I tried a couple of recipes, then a couple more, and another... And then “Ostap got carried away,” and now not a single holiday is complete without my cake. Sometimes very simple, sometimes quite complicated, but every time delicious and with its own character. And it seems I never repeat myself :)

Although no, I’m lying. I've done it twice already. And now another cake from the maestro - sour cream “Pinscher” (sometimes also called “Curly Pinscher”), the third in my confectionery biography, which became my birthday cake this year.

And no wonder: chocolate sponge cake soaked in delicate sour cream, caramelized bananas, all in the form of a neat snow-white slide, decorated with candied rose petals. And if you consider that almost anyone can handle the cake, it becomes clear why it has become one of our favorites.

The only rule useful for future culinary achievements: when frying bananas, follow fire safety rules! 🙂

9. Cut the trimmings and top crust into fairly large cubes. The remaining bottom layer will serve as the base for the cake.




10. Let's do the decor. We tear off the petals of the rose, brush each of them with egg white using a brush, sprinkle with powdered sugar and place on a baking sheet. Place in the oven for 20-30 minutes at 50 degrees. We periodically monitor them; you may need to move them so that they do not stick.






11. For the cream, mix sour cream and powdered sugar.


12. Assembling the cake. Spread the banana filling onto the base crust.


13. Place the biscuit cubes in small portions in a separate bowl, add a little cream, mix and place in a heap on the cake. And so on until the end of the cubes. Make sure the slide is level.

Based on my many years of confectionery experience, I can say that Pinscher cake is a real bestseller among sour cream cakes. Despite such popularity, nothing is known for certain about the appearance of the recipe for this cake. It is believed that the delicacy owes its name not to a dog breed, as one might think, but to a certain English Pincher family, which had a confectionery business. Most likely, it was one of the Pinchers who came up with not only the recipe for the cake, but also its somewhat careless design. Usually the irregularities of the cake are decorated with chocolate glaze, but my guest Ekaterina Ivanchikova, the lead singer of the group IOWA (“Iowa”), and I came up with a more sophisticated decor for it that matches the delicate sour cream taste of the cake.

Katya, you give the impression of not only a very musical, but also a very athletic girl...

I have been dancing since I was six years old. This love was passed on to me from my mother, who went on stage even when she was eight months pregnant. At one time I danced both classical and folk dances, and tried myself in modern styles, except that it didn’t come to pointe shoes. So my body was constantly in good shape. Now my main workload is concerts: during one performance I lose about two kilograms. But my dancing habits haven’t gone away: I can’t imagine a day without stretching exercises. Especially when you have to fly for five to eight hours in the fetal position.

What about taste habits?

At some point, I stopped craving fatty and fried foods, and began to crave vegetarian cream soups and fish. Probably, due to constant stress and a lost schedule, the body itself found its bearings and stopped wasting energy on bad habits. In general, I really miss the food from my childhood. I grew up with my grandmother in the village, where the main delicacies were potatoes in cast iron and sticky pancakes made with starch. All this was cooked in the oven. It seemed to me that some kind of magic was happening there in the oven - everything turned out so delicious! (Smiles.)

Speaking of the village. Aren't you offended that the songs you compose are called ditties?

No, this is cool! After all, what are ditties? This is a concentrate, a squeeze out of life situations. I act as an outside observer, capture the essence and broadcast it. One day at home I was enthusiastically watching Amy Winehouse’s concerts, and I had the idea to combine her style with Russian folk motifs to create something fashionable and at the same time authentic. This is how the song “Looking for a Husband” was born.

Is it true that the IOWA group began its conquest of St. Petersburg by working at a candle factory?

Yes, from our native Mogilev, my colleagues in the IOWA group Lenya Tereshchenko and Vasya Bulanov and I went to St. Petersburg with practically empty pockets. We rented an apartment. Opposite our house there was a factory, and we got a job there, painting candles. At the same time, they composed songs, participated in music competitions, at one of them they won a studio recording, at another they met producer Oleg Baranov. The first bird was “A Simple Song”, we shot a simple video for it, posted it on the Internet and even had the nerve to send it to one of the music channels. A week later we received a contract from this channel. This is how the word of mouth mechanism started.

The mechanism started, you got more clips, but they remained in the same “simple” style...

Yes, it makes us closer to the fans. For example, after the “Mom” video, which we shot in Hurghada, fans began to send us their romantic videos from their vacation. Now we are preparing to present a new video for the song “The Same Thing,” and have already released several teasers. I don’t rule out that some people found the setting a little strange, we just presented the story from our own angle.

About the location: why did you film the video for the song “Marshrutka” in Paris?

In a city that is in no way associated with minibuses? (Laughs.) There is no sacred meaning here, the guys and I just wanted to visit Paris. For me, this was generally the best adventure of the past year. I didn’t see any of the attractions from the guidebooks up close, but I did have a lot of conversations with the artists. We sang and danced to them, and they treated us to wine and croissants.

As they say, they worked for export. By the way, your debut album is called Export...

Yes, we do not forget about our roots. We are Belarusians after all. And everyone knows that Belarus has excellent meat, good knitwear, and now another high-quality product has appeared - the IOWA group. (Smiles.)
